Mandarin Oriental Cristallo, Cortina is preparing a premier alpine resort and seeks a Baker Chef to lead bread, viennoiserie and bakery production. You will work under the Head Pastry Chef to ensure exceptional quality, presentation and consistency across the resort.

The role requires expertise in bread making, fermentation, sourdough, and professional baking. Pre-opening experience and strong production planning are highly valued. English or Italian proficiency is expected.

Competenze

• Professional bakery, pastry or culinary qualification preferred.
• Experience in luxury hotel, artisan bakery, fine dining or similar high-quality environment is required.
• Experience with pre-opening is an advantage.

Mansioni

• Support pre-opening bakery setup and readiness.
• Develop and test bread, viennoiserie and bakery recipes.
• Assist with equipment commissioning, ingredient selection and supplier evaluation.
• Participate in tastings, mock services and pre-opening training.
• Establish production routines and HACCP procedures.
• Prepare breads, rolls, viennoiserie and bakery products to recipes.
• Plan daily production based on outlet needs and events.
• Maintain quality, appearance and freshness of products.
• Monitor ingredients, stock, storage and rotation.
• Train and guide junior bakery staff.
• Collaborate with Pastry and Culinary teams across the resort.
