Job summary

Castello di Casole, a Belmond Hotel, is seeking a passionate Kitchen Commis to support culinary operations in a luxury Tuscan setting. You will assist the Chef de Partie and senior kitchen team in daily prep, cooking, and presentation of fresh, high-quality dishes for our guests.

Qualifications

• Experience in a professional kitchen, ideally in luxury hotels or fine dining.
• Basic culinary knowledge and a passion for quality ingredients.
• Strong organizational skills and ability to work fast-paced shifts.
• Positive, team-oriented attitude and eagerness to learn from senior chefs.
• Good understanding of food hygiene and HACCP standards.

At Castello di Casole, a Belmond Hotel, we are looking for a passionate, visionary, and skilled Kitchen Commis, who will lead culinary operations to create fresh, seasonal, high-quality, and tailored dishes for each guest.

Primary Responsibilities Include

• Support the Chef de Partie and senior kitchen team in the daily preparation and execution of dishes, ensuring consistency with the Executive Chef’s vision and the Food & Beverage Manifesto of Belmond.
• Assist with the preparation, cooking, and presentation of high-quality dishes, following established recipes and presentation standards.
• Ensure the correct preparation, handling, storage, and labelling of all food items, maintaining the highest standards of quality and freshness.
• Maintain a clean, organized, and efficient workstation, ensuring all kitchen equipment and utensils are properly maintained.
• Support the kitchen team in managing stock, receiving deliveries, and ensuring the proper rotation and storage of ingredients.
• Contribute to sustainability initiatives, responsible ingredient usage, and active food waste reduction.
• Ensure full compliance with hygiene, safety, and sanitary standards, including HACCP regulations.
• Demonstrate a proactive attitude, willingness to learn, and commitment to continuous professional development within the kitchen brigade.

What You Bring

• Previous experience in a professional kitchen, preferably within luxury hotels, fine-dining restaurants, or high-end hospitality environments.
• Basic culinary knowledge and a genuine passion for food, cooking techniques, and quality ingredients.
• Strong organizational skills, attention to detail, and the ability to work efficiently in a fast-paced kitchen environment.
• A positive attitude, team-oriented mindset, and willingness to learn from senior chefs.
• Good understanding of food hygiene, safety procedures, and HACCP standards.
• Flexibility, reliability, and the ability to work shifts, including weekends and public holidays.
• Basic knowledge of Italian and English.
