As Production Manager, you will own the end-to-end production operations of our central kitchen. You will ensure the right quantity of food is produced, at the right quality, at the right cost, and delivered to outlets on time.
You will lead the production team, manage daily production planning, maintain food safety and quality standards, and drive operational efficiency across the kitchen.
Plan and manage daily production based on outlet requirements and sales forecasts.
Ensure timely production and dispatch of products to all outlets.
Maintain consistency in taste, quality, portion size, and presentation.
Improve production efficiency, yields, and reduce wastage.
Ensure all products are prepared as per approved recipes and SOPs.
Maintain strong knowledge of North Indian cuisine and traditional preparation methods.
Ensure compliance with FSSAI, hygiene, and food safety standards.
Monitor FIFO, FEFO, batch tracking, and quality checks.
Lead, train, and develop the central kitchen production team.
Plan manpower deployment and monitor productivity.
Control raw material consumption, production costs, and wastage.
Coordinate with Supply Chain, Quality, Operations, and HR teams.
Maintain production, quality, wastage, and manpower reports.
Identify operational gaps and implement corrective actions.
Support central kitchen expansion and new product launches.
58 years of experience in food production, central kitchen operations, QSR, or large-scale food service.
23 years of experience managing a production team.
Prior central kitchen experience is strongly preferred.
Strong knowledge of North Indian cuisine and production processes.
Preferably a North Indian candidate with hands-on experience in North Indian food production.
Strong understanding of food safety, standardized recipes, and production planning.
A hands-on, accountable leader who can manage a fast-paced kitchen environment.
Diploma or Bachelor's degree in Hotel Management, Food Technology, Culinary Arts, or a related field (preferred).
HACCP / FSSAI training is a plus.
Relevant central kitchen or food production experience will be strongly considered.
Own and scale a real central kitchen operation.
