Job Boosts in Mumbai seeks an experienced food product developer for bakery and dessert categories. You will lead cross-functional efforts with R&D, marketing, and production to create innovative products and optimize formulations.

The role requires 7-9 years in B2B FMCG, with a strong focus on quality and regulatory compliance in a manufacturing environment. Knowledge of HACCP and costing is valued, and the position is based on-site in Mumbai.

Qualifications

• 7-9 years of B2B FMCG product development experience in bakery and dessert.
• Bachelor's or Master's degree in Food Science, Food Engineering, or a related field.
• Experience in food manufacturing preferred.

Responsibilities

• Develop new food products and improve existing ones with cross-functional teams (R&D, marketing, production).
• Create and modify formulations to meet taste, texture, nutrition, and cost requirements.
• Research ingredient functionality, sensory attributes, and market trends to inform development.
• Identify and evaluate contract manufacturers and suppliers to meet quality and safety standards.
• Audit manufacturers to ensure regulatory compliance and brand requirements.
• Develop QC procedures from raw materials to finished products and perform testing.
• Stay updated with food safety regulations, labeling requirements, and allergen declarations.
• Prepare costing sheets, BOMs, technical specifications, and HACCP process flow.

Role & Responsibilities 1. Product Development and Formulation:

• Collaborate with cross-functional teams, including R&D, marketing, and production, to develop new food products or improve existing ones.
• Create and modify product formulations to meet taste, texture, nutritional, and cost requirements.
• Conduct research on ingredient functionality, sensory attributes, and market trends to inform product development.

Role & Responsibilities 2. Supplier and Contract Manufacturer Management:

• Identify and evaluate potential contract manufacturers and suppliers to ensure they meet the brand's quality and safety standards.
• Establish strong working relationships with contract manufacturers, providing technical guidance and support throughout the production process.
• Conduct audits and assessments of contract manufacturers to ensure compliance with regulatory standards and brand requirements.

Role & Responsibilities 3. Quality Assurance:

• Develop and implement quality control procedures to monitor the entire production process, from raw materials to finished products.
• Perform regular inspections and testing of products, ingredients, and packaging materials to ensure they meet specifications.
• Address any quality issues or deviations, investigating root causes and implementing corrective and preventive actions.

• Stay up-to-date with food safety regulations, labelling requirements, and industry standards to ensure all products are compliant.
• Assist in the preparation of regulatory documentation, such as ingredient lists, nutritional labelling, and allergen declarations.

• Continuously evaluate manufacturing processes and identify opportunities for optimization, cost savings, and efficiency improvements.
• Collaborate with manufacturing partners to implement process changes and enhancements that align with the brand's goals.

• Train contract manufacturer personnel on product specifications, quality standards, and best practices to ensure consistent production.

• Act as a technical resource for troubleshooting production issues, conducting root cause analysis, and implementing solutions to maintain product quality and consistency.
