Job summary

Momentum Placements is seeking a skilled NPD professional to drive fruit preparation development for bakery and dairy applications. You will conduct lab, pilot, and plant trials, optimize formulations for taste, texture, shelf life, and cost, and ensure compliance with food safety standards.

The role requires 3+ years in fruit-based NPD, hands-on formulation experience, strong documentation skills, and proficient data analysis.

Qualifications

• 3+ years of experience in new product development (NPD) for fruit preparations.
• Hands-on formulation, pilot-scale development and plant trials.
• Strong understanding of fruit chemistry, pH, Brix, acidity, viscosity, stabilizers, and processing.
• Knowledge of shelf-life testing and microbial safety in fruit-based systems.
• Good documentation, Excel and data analysis skills.

Responsibilities

• Develop new fruit preparation products for bakery/dairy applications.
• Conduct lab, pilot, and plant trials for new product development.

• Work on clean-label, reduced sugar, natural flavour and colour as required.
• Ensure product performance in bakery, dairy, confectionery, or dessert systems.
• Carry out sensory evaluation and benchmark against internal/market data.
• Support scale-up, line trials, and first commercial production batches.
• Troubleshoot technical issues during development, production or post-launch.
• Prepare formulation sheets, technical specifications, trial reports, and validation documents.
• Ensure compliance with FSSAI, labeling requirements and food safety standards.
• Support shelf-life studies, microbiological testing coordination, and product stability validation.

Role & responsibilities

• Develop new fruit preparation products such as fruit fillings, purees, toppings, jams, fruit inclusions, for bakery/dairy application products.
• Conduct laboratory trials, pilot trials, and plant trials for new product development.
• Optimize formulations for taste, texture, functionality, shelf life, and cost.
• Work on clean-label, reduced sugar, natural flavour, and natural colour solutions where required.
• Ensure product performance in the final application such as bakery, dairy, confectionery, or dessert systems.
• Carry out sensory evaluation and compare products against internal and market benchmarks.
• Support scale-up, line trials, and first commercial production batches.
• Troubleshoot technical issues during development, production or post-launch.
• Prepare formulation sheets, technical specifications, trial reports, and validation documents.
• Ensure compliance with FSSAI, customer specifications, labelling requirements and food safety standards.
• Support shelf-life studies, microbiological testing coordination, and product stability validation.

Preferred candidate profile

• B.Tech in Food Technology, Food Science, Food Engineering
• 3+years of experience in NPD preferably in fruit preparations, fruit processing
• Hands-on experience in formulation, pilot-scale development, and plant trials.
• Good understanding of fruit chemistry, pH, Brix, acidity, viscosity, stabilizers, preservatives, and thermal processing.
• Knowledge of shelf-life testing, process control, and microbial safety in fruit-based systems.
• Strong documentation, Excel, and data analysis skills.
• Good communication and coordination skills.
