Job summary

Gionik Human Capital Solutions is seeking an F&B Controller to monitor, analyze, and control food and beverage costs across all outlets and central kitchen operations.

You will ensure accurate recipe costing, variance reporting, and inventory control, coordinating with operations, stores, and finance to drive cost efficiency and profitability.

Qualifications

• Graduate / Diploma in Hotel Management, Finance, or related field.
• Experience in F&B cost control, preferably in multi-outlet operations.

• Prepare and monitor monthly food cost reports for Central Kitchen and all outlets.
• Conduct menu costing and dispatch-wise food cost analysis for outlets.

Job description

The F&B Controller will be responsible for monitoring, analyzing, and controlling the overall food & beverage costs across all outlets and central kitchen operations. The role ensures accurate recipe costing, variance reporting, inventory control, and effective coordination with operations, stores, and finance teams to achieve cost efficiency and profitability.

Key Responsibilities:

Costing & Analysis

• Recipe costing (practical costing & cross-verification with chef inputs).
• Prepare and monitor individual food cost for Central Kitchen & all outlets.
• Prepare monthly food cost reports based on issues and purchases.
• Conduct menu costing and dispatch-wise food cost analysis for outlets.

Operations & Control

• Day-to-day verification of challans, vendor bills, and store issues.
• Monitor and control overall site food cost (CK and outlets).
• Support operations team in maintaining budgeted food cost levels.
• Ensure contracted rates are correctly updated in the master file for accurate costing. Rate freeze as per the contract rate.
• Approve and sign daily production indents for consumption reporting.
• Conduct random checks in stores during raw material issuance to prevent variances.
• Must possess strong knowledge of inventory control and stock valuation methods such as FIFO (First In, First Out) and LIFO (Last In, Last Out) to ensure accurate costing and efficient material management.

Reporting

• Provide detailed reports to Management, Operations GM, Corporate Chef, and Finance Controller.
• Highlight variances, cost-saving opportunities, and operational inefficiencies.
