Job summary

Della Resorts in Lonavala, Maharashtra is seeking an experienced F&B Controller to drive cost control across all restaurants, bars, kitchens, and other F&B operations.

The role focuses on monitoring costs, managing inventory, and ensuring compliance with budgets and SOPs, reporting to the Finance Head. 5–8 years of relevant F&B experience preferred.

Qualifications

• Strong knowledge of food and beverage costing, inventory management, and stock audits.
• Experience 5-8 years in F&B cost control.
• Bachelor degree in Hotel Management, Finance, or Commerce or related field.

Responsibilities

• Monitor food and beverage costs, consumption, and operational expenses.
• Prepare daily, weekly, and monthly cost reports and MIS.
• Conduct regular inventory checks and physical stock audits.
• Analyse food costs, beverage costs, wastage, and variances.
• Monitor purchase prices, vendor rates, and adherence to approved budgets.
• Coordinate with the Executive Chef, F&B Operations, Stores, Purchase, and Finance teams.
• Ensure proper control over stock receipts, issues, transfers, and consumption.
• Verify recipe costing, portion control, and menu profitability.
• Identify cost-saving opportunities and recommend corrective actions.
• Ensure compliance with company policies, SOPs, and audit requirements.
