Responsibilities

• Oversee 24x7 cafeteria operations across Breakfast, Lunch, Dinner, and overnight meals.
• Plan and execute 24x7 shift rosters for supervisors, chefs, service associates and housekeeping.
• Ensure quality, portion control and service speed during high-volume peak hours.
• Coordinate with Kitchen to maintain menu variety, nutrition, and timely replenishment; ensure HACCP compliance.

Cafeteria Manager (Hospitality Background - Lonavala)

Della Resorts is seeking an experienced, high-energy Cafeteria Manager to oversee and drive 24x7 Staff Cafeteria & EDR operations at our premier luxury resort in Lonavala. This position is responsible for managing all aspects of round-the-clock dining service across Breakfast, Lunch, Dinner, and Midnight Meals /Early Morning meals (as required). The ideal candidate will uphold luxury hospitality standards, maintain hygiene and safety protocols, streamline meal production and service flows, and ensure seamless 24/7 staffing and inventory control.

Key Responsibilities

• Operations Management (24x7 Scope)
  • 24x7 Service Oversight: Manage continuous round-the-clock cafeteria operations covering daily Breakfast, Lunch, Dinner, and overnight late-night meal services.
  • Shift Scheduling: Plan and execute 24x7 shift rosters for supervisors, chefs, service associates, Housekeeping Associates and stewards to ensure full operational coverage without service downtime.
  • Quality & Flow Control: Oversee food presentation, freshness, portion control, and service speed during high-volume peak meal hours.
  • Coordination with Kitchen (F&B Production): Partner closely with Head Chefs and Sous Chefs to maintain menu variety, thoughts in menu planning, nutritional balance and timely replenishment.
• Quality Assurance, Food Safety & Hygiene
  • HACCP & Hygiene Compliance: Ensure strict adherence to Food Safety and Standards Authority of India (FSSAI) guidelines, HACCP standards, and internal Della hygiene SOPs.

Minimum Qualification

Bachelor’s Degree or Diploma in Hotel Management / Hospitality Administration.

Minimum Job Experience

5-8 years of experience in F&B / Cafeteria management, preferably within 4/5-star luxury resorts, large-scale hotels, or high-volume corporate/resort catering.
