Job summary

Hilton in Chennai is seeking an Assistant Stewarding Manager to lead a stewarding team, oversee back-of-house operations, and uphold sanitation standards across restaurant and banquet services.

You will supervise utility stewards, dishwashers, and temporary staff, coordinate inventory and equipment, and support team development while maintaining health and safety regulations. A minimum of 3 years in a 5-star hotel and HACCP knowledge are required.

Qualifications

• Middle School Diploma equivalent or above.
• At least 3 years of working experience in a 5-star category hotel.
• Minimum of 2 years as a Stewarding Team Leader in an international brand hotel.
• Knowledgeable in HACCP.

Responsibilities

• Supervise daily back-of-house operations: oversee utility stewards, dishwashers, and temporary staff for timely transport and cleaning of utensils and serviceware.
• Maintain cleanliness and organization: supervise cleaning of back-of-house spaces to uphold sanitation and hygiene standards.
• Support inventory and equipment needs: ensure proper inventory levels, manage equipment storage and distribution, and coordinate delivery for all functions.
• Support team performance and development: assist with scheduling, coaching, evaluations, and recognizing achievements.
• Monitor and report on performance metrics: track breakage, update manuals, assist with monthly inventories for cost controls.
• Collaborate across teams: partner with kitchen, bar, and restaurant teams for seamless service.
• Uphold regulatory standards: maintain health, safety, sanitation, and alcohol regulations.

Responsibilities

Here’s what you’ll do during a typical day:

• Support inventory and equipment needs: Ensure proper inventory levels, manage equipment storage and distribution, and coordinate the timely delivery of food and equipment for all functions
• Support team performance and development: Assist with day-to-day team oversight, scheduling shifts, coaching and professional development, conducting evaluations, and recognizing achievements
• Monitor and report on performance metrics: Track breakage and loss reports, update operating manuals, and assist with monthly inventories to support cost controls and efficiency improvements
• Collaborate across teams: Partner with kitchen, bar, and restaurant teams to ensure seamless service, assisting team members where needed
• Uphold regulatory standards: Maintain compliance with health, safety, sanitation, and alcohol awareness regulations, ensuring the highest standards of guest and team member well-being
