Lotus Dairy Products Private Limited is seeking an Assistant Manager – New Product Development for its Manda Plant (Sikar) to lead end-to-end dairy NPD from concept through scale-up and commercialization. The role requires strong expertise in dairy processing, formulation and regulatory compliance to ensure quality and profitability.

The ideal candidate should have 8–12 years in Food/Beverage R&D or NPD commercialization, with hands-on experience in dairy beverages and RTD products.

Qualifications

• Bachelor/Master in Dairy Technology, Food Technology or Food Science or related field.
• MBA/Management qualification adds advantage.
• 8–12 years of relevant experience in Food/Beverage R&D or NPD commercialization.

Responsibilities

• Lead development of new dairy products from concept to commercial launch.
• Develop and optimize formulations for taste, texture, stability, nutrition, shelf life and cost.
• Plan and lead lab, pilot and plant trials, including scale-up and technology transfer.
• Provide technical expertise in dairy processing, homogenization, heat treatment, fermentation, retort/UHT and beverage technology.
• Conduct shelf-life, stability, sensory and product benchmarking studies.

Education

B. Tech/M. Tech/M.Sc. in Dairy Technology, Food Technology, Food Science or related field

Assistant Manager – New Product Development – Dairy

Role Purpose

To lead end-to-end New Product Development for dairy products from concept and formulation through plant trials, scale-up and commercialization, ensuring product quality, stability, regulatory compliance and commercial viability.

Reporting to

Head (New Product Development)

Key Responsibilities

• Lead development of new dairy products from concept to commercial launch.
• Develop and optimize formulations for taste, texture, stability, nutrition, shelf life and cost.
• Plan and lead lab, pilot and plant trials, including scale-up and technology transfer.
• Provide technical expertise in dairy processing, homogenization, heat treatment, fermentation, retort/UHT and beverage technology.
• Conduct shelf-life, stability, sensory and product benchmarking studies.
• Troubleshoot formulation and processing issues during plant trials and commercial production.
• Evaluate new ingredients, flavors, cultures, stabilizers, proteins and functional ingredients.
• Work closely with Production, QA, Regulatory, Procurement, Marketing and Business Development teams.
• Ensure compliance with applicable FSSAI and food regulatory requirements.
• Support product costing, cost optimization and commercial feasibility.
• Manage NPD projects, timelines, documentation and successful product launches.

Qualification

B. Tech/M. Tech/M.Sc. in Dairy Technology, Food Technology, Food Science or related field.

MBA/Management qualification will be an added advantage.

Experience

• 8–12 years of relevant experience in Food/Beverage R&D or NPD commercialization.
• Strong experience in dairy beverages, RTD products, formulation, plant trials and commercialization preferred.
