TTK Healthcare in Bengaluru, Karnataka, seeks an Assistant Manager - Formulation to lead extrusion-based snack pellet development. The role focuses on creating robust formulations, optimizing texture, expansion, and shelf life for healthier snacks, with travel across India as needed.

The ideal candidate holds an M.Sc./M.Tech in food science/engineering and has 3–5 years of experience in food R&D or formulation, including pilot plant trials and scale-up capabilities.

• 3–5 years of experience in Food R&D or Formulation.
• Experience with Extruded Snacks or Snack Pellets.
• Willingness to travel PAN INDIA locations; Hindi speaking mandatory.

Responsibilities

• Develop and optimize formulations for extruded snack pellets and innovative snack products.
• Lead laboratory, pilot plant, and commercial production trials to ensure successful product scale-up.
• Improve product quality by optimizing texture, expansion, oil uptake, shelf life, and sensory characteristics.
• Troubleshoot formulation and process-related issues during development and commercialization.
• Ensure compliance with food safety and quality standards (FSSAI, HACCP, GMP, ISO/FSSC).
• Collaborate with Procurement to evaluate ingredients for cost-effective formulations.
• Prepare formulation records, technical docs, specs, and trial reports.
• Drive innovation projects focused on healthier, multigrain, and clean-label snacks.
• Collaborate with Production, Quality, Procurement, Sales, and Marketing to launch new products.
• Mentor junior R&D professionals and promote continuous improvement.

Location - Bengaluru, Karnataka.

What You'll Do :

• Develop and optimize formulations for extruded snack pellets and innovative snack products.
• Lead laboratory, pilot plant, and commercial production trials to ensure successful product scale-up.
• Improve product quality by optimizing texture, expansion, oil uptake, shelf life, and sensory characteristics.
• Troubleshoot formulation and process-related issues during development and commercialization.
• Ensure compliance with food safety and quality standards, including FSSAI, HACCP, GMP, and ISO/FSSC requirements.
• Partner with Procurement to evaluate ingredients and identify cost-effective formulation opportunities.
• Prepare formulation records, technical documentation, specifications, and trial reports.
• Drive innovation projects focused on healthier, multigrain, and clean-label snack solutions.
• Collaborate closely with Production, Quality, Procurement, Sales, and Marketing teams to bring new products to market.
• Mentor junior R&D professionals and contribute to a culture of continuous improvement.

We're Looking For

• 3 -5 years of experience in Food R&D, Product Development, or Formulation.
• Hands-on experience with Extruded Snacks, Snack Pellets, or Third Generation (3G) Snacks.
• Strong understanding of extrusion technology, food ingredients, starch functionality, and raw material behavior.
• Experience conducting pilot trials and commercial product scale-up.
• Knowledge of food quality systems and regulatory compliance.
• Experience in FMCG or food manufacturing environments.
• Strong analytical and problem-solving skills.
• Excellent communication and cross-functional collaboration abilities.
• Willingness to travel to manufacturing plants, suppliers, laboratories, and market locations across India.
• Conversational Hindi and English proficiency will be an added advantage.
