Job summary

Sheen Falls Lodge Limited is seeking an experienced Restaurant & Bar Manager to lead The Stables Brasserie and Bar at the five-star Sheen Falls Lodge in Kenmare, Co. Kerry. You will own daily operations, build a confident service team and contribute to ongoing development of The Stables.

The role involves balancing guest service with strong commercial performance, coaching the team, and coordinating with kitchen and other departments to ensure smooth reservations, timing and events.

Qualifications

• Minimum two years' experience in a similar management role.
• Experience in a luxury hotel or upscale restaurant is advantageous.
• Ability to lead a busy restaurant, brasserie or bar operation.

Responsibilities

• Lead service on the floor, welcoming guests and supporting the team during service.
• Coach supervisors and colleagues, deliver practical training and foster a positive working environment.
• Coordinate operations with the kitchen and other departments on reservations, timing, dietary requirements and events.

Restaurant & Bar Manager

The Stables Brasserie Sheen Falls Lodge | Kenmare, Co. Kerry

We are seeking an experienced Restaurant & Bar Manager to lead The Stables Brasserie and Bar team at five-star Sheen Falls Lodge. If you enjoy leading from the front, developing people and creating a dining experience that brings guests back, this is an opportunity to make your mark. You will take ownership of the operations, build a confident service team and contribute ideas to the continued development of The Stables.

The opportunity

Reporting to: the Hotel Manager, you will lead the team from the front, balancing excellent guest service with strong commercial performance.

You will

Lead service: maintain a visible presence on the floor, welcome guests and support your team throughout service.

Develop your people: coach supervisors and colleagues, deliver practical training and build a positive, respectful working environment.

Coordinate operations: work closely with the kitchen and other departments on reservations, service timing, dietary requirements and events.

Manage performance: plan rosters and staffing, monitor revenue and labour costs, and control purchasing, stock and wastage.

Maintain standards: oversee accurate billing, cash handling, food safety, allergen procedures and responsible alcohol service and keep SOP's up to date and relevant.

Grow the business: build guest relationships, respond thoughtfully to feedback and identify opportunities to improve the offering.

About you

You will bring experience leading a busy restaurant, brasserie, bar or comparable food and beverage operation, together with:

• A proven ability to motivate, coach and develop a team.
• A warm, professional approach to guests and confidence handling service concerns.
• Strong food, wine and beverage knowledge.
• Sound commercial judgement and experience managing staffing, stock and costs.
• Clear communication, attention to detail and a calm, organised approach during busy service.
• Good IT skills, including Microsoft Office and Excel; familiarity with POS and rostering systems is an advantage.

Ideally, you will have at least two years' experience in a comparable management role. We also welcome applications from experienced assistant managers who can demonstrate readiness to lead an outlet. Experience in a luxury hotel or comparable restaurant would be an advantage.
