Job summary

Dunboyne Castle Hotel & Spa is seeking a Senior Sous Chef to join the team under Windward Management. You will help run the kitchen, supervise staff, and ensure top quality dishes across all outlets.

Reporting to the Executive Head Chef, you will lead daily operations, maintain hygiene standards, mentor junior chefs, and deputise when needed. This role offers progression within the Windward group and a supportive kitchen environment.

Qualifications

• Four years experience as a Chef de Partie or equivalent in a busy kitchen.
• Experience in a supervisory/management role within a busy kitchen.
• Excellent communication skills, both verbal and written.

Responsibilities

• Lead and supervise kitchen staff to deliver high-quality dishes.
• Collaborate with Food & Beverage teams to meet guest needs and standards.
• deputise for the Executive Head Chef in their absence.
• Ensure hygiene and health regulations are followed in all prep and service.
• Assist in stock ordering and training to develop the kitchen team.
