Responsibilities

• Prepare and portion beef, lamb, pork, poultry and other meats to standards.
• Bone, trim, tie, grind and cut meat using professional equipment.
• Maintain attractive, fully stocked meat displays.
• Advise customers on product selection and cooking methods.
• Ensure products are priced and labelled correctly.
• Monitor stock rotation and minimise waste.
• Receive and inspect deliveries for quality and freshness.
• Follow HACCP, hygiene, and safety procedures at all times.
• Clean and maintain workstations, knives, machinery and prep areas.
• Support colleagues and store operations.

Reports to: Head Butcher & Store Manager

We are seeking a skilled and customer-focused Retail Butcher to join our team. The successful candidate will be responsible for preparing, cutting, trimming, and presenting meat products to a high standard while delivering excellent customer service. This role requires strong product knowledge, attention to hygiene and food safety standards, and the ability to work efficiently in a fast-paced retail environment.

Key Responsibilities:

• Prepare and portion beef, lamb, pork, poultry, and other meat products to company standards.
• Bone, trim, tie, grind, and cut meat using professional butchery equipment.
• Maintain attractive and fully stocked meat displays.
• Advise customers on product selection, cooking methods, and portion sizes.
• Ensure all products are correctly priced and labelled.
• Monitor stock rotation and minimise waste.
• Receive and inspect deliveries for quality and freshness.
• Follow HACCP, food safety, hygiene, and health & safety procedures at all times.
• Clean and maintain workstations, knives, machinery, and preparation areas.
• Support colleagues and contribute to efficient day-to-day store operations.

Skills & Experience Required

• Previous experience as a butcher or meat cutter in a retail or food environment
• Strong knife skills and knowledge of meat preparation techniques
• Good understanding of food hygiene and safety regulationsAbility to work in a chilled environment

• Reliable, punctual, and capable of working as part of a team
• Formal butchery qualification or apprenticeship
