Qualifications

• Extensive knowledge of food and beverages, and food and beverage service.
• 5* hotel restaurant experience.
• Excellent attention to detail.
• Strong communication skills and ability to relate with people at all levels.
• Proven ability to deliver exceptionally high level of customer service.
• Experience in staff training, development, and retention.
• In-depth knowledge of food and beverage at a 5* level.
• Fluent English (both oral and written).
• Full legal status to work in Ireland.

Responsibilities

• Oversee and ensure friendly, efficient service across breakfast, lunch, and dinner, as well as events.
• Manage the department to consistently achieve the highest safety, hygiene and operational standards.
• Maintain a high standard of customer care and customer relations.
• Operate an effective, efficient department with a well-trained staff.
• Report to Restaurant Manager and manage shifts, including lunch, lounge, and dinner services.
• Oversee stock management for Stables Brasserie and Bar.
• Train and coach the team on service, events, and room service.
• Ensure HACCP protocols in service and storage, including fridge temps and perishables.
