The Spencer Hotel in Dublin is seeking an experienced Food & Beverage Manager to lead the F&B team and ensure delivery of high-quality service across outlets. You will oversee daily operations, drive guest satisfaction and manage menus, promotions, and seasonal offerings.

Ideal candidates will have 2–3 years in F&B management within 4–5 star settings, strong leadership, and the flexibility to work evenings, weekends and peak periods. Excellent communication and cost-control skills are essential.

Qualifications

• Minimum 2–3 years’ experience in a Food & Beverage management role within a 4 or 5-star hotel or high-end restaurant.
• Willingness to work evenings, weekends and busy seasonal periods.
• Strong leadership and team development skills.

Responsibilities

As part of the MHL Hotel Collection, The 4* Spencer Hotel is in prime location overlooking the River Liffey in the heart of Dublin's financial district. Home to 209 guest bedrooms, 8 Meeting rooms, The Spencer Cocktail Bar & East are now looking to recruit experienced Food and Beverage Manager to join our dynamic F&B Team located in The Spencer Hotel. The hotel is located within 10 minutes’ walk from O’Connell Street, with easy access to Connolly & Dublin Docklands Dart & commuter train stations. The Luas and Dublin Bus services are also within minutes’ walk from the Hotel.

About the position:

• The main purpose of this role will be the delivery of high quality service across Food and Beverage outlets.
• The manager will be tasked with staff development, rostering and training in this department.
• Oversee the daily operation of the Food & Beverage department.
• Lead, train, and motivate the F&B team to deliver outstanding guest service.
• Ensure consistent delivery of MHL standards across all service areas.
• Work closely with the line manager to develop menus, promotions, and seasonal offerings.
• Drive revenue growth through effective upselling, events, and guest engagement.
• Monitor stock control, purchasing, and supplier relationships.
• Maintain strict compliance with health & safety and food hygiene regulations.
• Manage budgets, cost controls, and departmental financial performance.
• Handle guest feedback and ensure service recovery where required.

Ideal candidate will possess:

• Role would suit a hands on and customer focused hospitality professional looking to make a move into a large city hotel
• Minimum 2–3 years’ experience in a Food & Beverage management role within a 4 or 5-star hotel or high-end restaurant
• Flexibility to work evenings, weekends, and busy seasonal periods.
• You will be a people focused manager to support and mentor all staff
• An ability to identify areas for improvement in operations, costings and internal development
• Proven leadership and team development skills.
• Excellent communication and organisational abilities.
• A passion for food, beverage, and exceptional guest experiences.
• Knowledge of Irish hospitality standards and compliance regulations.
• Ability to represent the Food and Beverage department at meetings when required.
