Ashford Castle’s George V Restaurant in Cong, County Mayo, is recruiting a Chef de Partie to join the kitchen team under Executive Head Chef Liam Finnegan, delivering fine dining to Forbes Five-Star standards.

Qualifications

• Formal chef qualification or culinary training is required.
• Experience as a Chef de Partie or Demi Chef de Partie in a four- or five-star kitchen is preferred.
• Passion for food and fine dining is essential.
• Strong communication and teamwork skills are important.
• High personal standards and attention to detail are expected.
• Ability to perform well in a fast-paced kitchen environment.
• Must be legally eligible to work in Ireland.

Responsibilities

• Prepare and produce food for your section, following recipes and presentation standards.
• Oversee day-to-day running of your section and supervise assigned staff.
• Plan and prepare for service, functions and banquets with efficient stock control and minimal waste.
• Manage time effectively to ensure smooth service delivery.
• Maintain strong working relationships with kitchen and restaurant teams.
• Contribute ideas for menu development and continuous improvement.
• Adhere to Food Hygiene and HACCP regulations and monitor Commis Chef compliance.
