About The Role

Brewers at St. James’s Gate play a key role in balancing tradition with innovation, ensuring every batch meets the highest quality, safety, and efficiency standards while pushing for continuous improvement. You’ll be hands-on with production, process optimisation, and problem-solving, and you’ll help shape the future of brewing at Guinness.

What You’ll Do
  • Lead and support health, safety, environment and hygiene initiatives (inspections, risk assessments, audits).
  • Deliver production plans, monitor KPIs, and take action to keep processes on track.
  • Optimise plant and process performance, implementing improvements where needed.
  • Monitor in-process quality and lead initiatives to strengthen product consistency.
  • Carry out maintenance checks and process audits.
  • Use systems such as MES, SAP, Braumat, Proleit, Harford to analyse data and drive improvement.
  • Solve problems using structured tools (Fishbone, 5 Whys, SIC) and lead root cause sessions.
  • Lead improvement projects and create/update SOPs.
  • Actively contribute to Tier 1 team meetings and track actions through to completion.
  • Own your annual performance and personal development plan.

  • Is a strong communicator and problem solver.

Preferred Background
  • Scientific and/or engineering qualification—or proven relevant experience.
  • Knowledge of beverage production or process-led manufacturing. Familiarity with quality, safety, and environmental systems.

St. James's Gate Brewery in Dublin is Diageo's largest manufacturing facility in Ireland, and the largest stout brewery in the world, producing over three million pints of Guinness every day, supplying a growing Irish, UK and US market, and exporting to 90 global markets. Our main beer brands are Guinness, Rockshore, Hop House 13, Smithwick's and Harp. We also brew Carlsberg and Tuborg under licence for the Irish market, as well as a range of newer products, most recently Guinness 0.0 The brewery is highly utilised placing a premium on plant and process reliability.

In late 2014 Diageo completed a €169 million investment creating a world class brewing centre of excellence at St. James's Gate, which has increased the competitiveness of beer exports through our end-to-end global supply chain network. Given continued growing demand for our beers, Diageo committed a further €100 million to the Brewery last year, enabling our team to deliver increased volume, new innovations and replacing our Kegging facility.
