Job summary

Calusade Hotels Limited is seeking a Bartender on a permanent basis at The Fairways Hotel Dundalk. You will deliver friendly, efficient beverage service and maintain a strong knowledge of our drinks menus to enhance guest experiences.

Responsibilities include accurate order taking, cash handling, compliance with licensing and hygiene standards, and collaborating with our Food & Beverage team. Previous bar or hospitality experience and a flexible, team-oriented attitude are essential.

Calusade Hotels is an Irish hospitality group owning and operating four well-established hotels: The Keadeen Hotel in Newbridge, Fairways Hotel and The Gateway Hotel in Dundalk, and Hotel Kilmore in County Cavan. Position Summary

The Bartenderis responsible for delivering efficient, courteous and high-quality beverage service in line with Calusade Hotels standards. This role supports guest satisfaction by preparing and serving drinks accurately, maintaining excellent product knowledge and ensuring full compliance with licensing, cash handling and hygiene requirements while embedding Calusade Hotels values in all interactions.

Key Responsibilities

Guest Service & Beverage Delivery

• Provide prompt, professional and courteous service to all bar guests.
• Accurately record and process food and beverage orders.
• Prepare and garnish drinks in line with bar standards.
• Check back with guests to ensure satisfaction and offer additional service.
• Inform guests of last orders in a polite and timely manner.
• Maintain strong product knowledge of all beverages and bar menus.
• Promote additional sales through professional upselling.

Operational Standards

• Ensure bar stations are fully stocked and maintained with proper mise-en-place.
• Maintain cleanliness and organisation of the bar and work areas.
• Assist with bar layout and furniture arrangement as required.
• Monitor reservations and coordinate with bar leadership.
• Maintain knowledge of hotel facilities and local area information.

Cash, Licensing & Compliance

• Process guest checks accurately and securely.
• Comply fully with responsible service of alcohol regulations.
• Handle intoxicated guests professionally and safely.
• Ensure compliance with food safety, hygiene and sanitation standards.
• Follow all hotel payment and cash handling procedures.
• Complete required documentation via Flow and Alkimii where applicable.

Teamwork & Professionalism

• Work collaboratively with the Food & Beverage team.
• Maintain a clean, safe and professional working environment.
• Report defective equipment or maintenance issues promptly.
• Attend training sessions and team meetings as required.
• Demonstrate flexibility to support other departments when needed.
• Continuously develop product knowledge and job skills.

CANDIDATE PROFILE

• Previous experience in a bar or hospitality environment preferred.
• Strong knowledge of beverages, wines and responsible service of alcohol.
• Excellent communication and guest service skills.
• Good numeracy and cash handling ability.
• Organised, reliable and trustworthy.
• Flexible and able to work in a fast-paced environment.
