Job summary

Great National Hotel Ballina is seeking a motivated Commis Chef to join our busy kitchen team at Dublin Road, Ballina, Co. Mayo.

This role offers either full-time or part-time hours and provides hands-on experience under our Head Chef, Sous Chef and senior kitchen team. You will gain practical experience across food preparation, service, banqueting and kitchen operations while working in a friendly hotel environment.

Qualifications

• Passion for food and developing a culinary career.
• Holds or is working towards a relevant culinary qualification; training may be provided.
• Has previous kitchen experience.
• Understands HACCP, allergen controls and workplace safety.
• Reliable, punctual, organised, and able to work in a busy environment.
• Willing to learn.
• Available to work early mornings, evenings, weekends and public holidays.
• Has work permits to work in Ireland.

Responsibilities

• Assist with preparing, cooking and presenting dishes to the required standard.
• Follow approved recipes, portion controls and menu specifications.
• Prepare and organise your workstation before and after service.
• Maintain excellent standards of cleanliness, food hygiene and personal presentation.
• Follow all HACCP, allergen-management and food-safety procedures.
• Complete assigned temperature, cleaning and operational records through Logit.
• Use Alkimii for rosters, clocking in and out, breaks, leave requests, training and company communications.
• Store, label and rotate food correctly while helping to minimise waste.
• Operate kitchen equipment safely and report faults, hazards or maintenance requirements immediately.
• Support breakfast, lunch, dinner, banqueting and function service as required.
• Participate in training, job chats and performance reviews.
• Work cooperatively with colleagues across the kitchen and wider hotel.
