Job summary

HAL - Holland America Group in Indonesia (SBI) seeks a 2nd Commis Cook to work in the Galley under the Sous Chef, preparing food for service according to menus and recipes.

The role requires 2+ years’ experience in a 5-star hotel/cruise or high-profile restaurant, with experience in high-volume service and a certified advanced food safety program. English proficiency is essential for communication onboard.

Qualifications

• 2+ years’ experience in a 5 star+ hotel, cruise ship or high-profile establishment in a similar role.
• Experience in high-volume operation of at least 100 meals per service.
• DEFU - November 2020 certification.
• Certification from accredited advanced food safety program; VSP knowledge preferred.
• Extensive knowledge of kitchen machinery and knife safety.
• Ability to read, write and speak English.
• Degree from accredited culinary college or university (preferred).

Responsibilities

• Comply with company policy regarding waste separation and environmental compliance.
• Ambassador for food waste by minimizing waste when preparing any product.
• Ensure quality, quantity, attractiveness and correctness of all food items prepared and served.
• Implement food handling and cleaning procedures per USPH standards.
• Follow HACCP procedures set by the company.
• Maintain and return equipment and utensils to prevent damage or loss.
• Report malfunctioning equipment to the Chef de Partie.
• Ensure personal conduct aligns with company rules and regulations.
• Strive to meet Guest Satisfaction Scores for food ratings in assigned area.
• Follow guidelines from Chef de Partie and Chef de Cuisine.
• Maintain productivity, cleanliness and sanitation throughout the shift.
• Perform other job-related functions as assigned.
