Job summary

PT Expat Roasters Indonesia is seeking an experienced Head Kitchen to lead and supervise all daily kitchen operations in Surabaya. You will actively participate in food preparation, cooking, and plating during service, ensuring quality, taste, presentation, and consistency meet company standards.

The role requires strong leadership, hands-on involvement, and the ability to manage menus, control food costs, and coach the kitchen team to deliver exceptional dining experiences at all times.

Qualifications

• Minimum 3–5 years of experience in a professional kitchen with leadership experience.
• Strong knowledge of kitchen operations and food cost control.
• Strong leadership, discipline, and ability to work under pressure.
• Willing to be hands-on and actively involved in daily kitchen operations.

Responsibilities

• Lead and supervise all daily kitchen operations.
• Participate in food prep, cooking, and plating during service.
• Ensure food quality, taste, presentation, and consistency meet company standards.
• Organize staff schedules and assign daily kitchen duties.
• Conduct daily briefings and provide clear direction to kitchen staff.
• Train, mentor, and evaluate kitchen team performance.
• Develop and update menus in line with the business concept.
• Calculate and control food cost to meet company targets.
• Oversee purchasing and inventory management of kitchen supplies.
• Monitor stock levels and minimize food waste.
• Handle customer complaints related to food quality professionally.
• Ensure cleanliness, hygiene, and food safety standards are consistently maintained.
