Landaus in Hong Kong is seeking an experienced General Manager to lead a high-volume Western restaurant. You will be a visible, hands-on leader with a passion for hospitality, ensuring outstanding food, beverage and guest experiences across service periods.
You will oversee daily operations, staff development, financial reporting, and adherence to group procedures, while collaborating with kitchen and bar teams to maintain quality and guest satisfaction.
Landaus is seeking an experienced, commercially minded and service-led General Manager to lead a high-volume Western restaurant operation. The successful candidate will be a visible, hands‑on leader with strong operational discipline, a genuine passion for hospitality, and the ability to consistently deliver excellent food, beverage and guest experiences.
This role is responsible for the overall day‑to‑day performance of the restaurant, including service standards, team leadership, guest satisfaction, financial awareness, operational reporting, and compliance with group procedures.
Lead all daily restaurant operations to ensure smooth, efficient and profitable service across all meal periods
Deliver consistently high standards of food, beverage, service, cleanliness, presentation and guest care
Lead, coach, motivate and develop a large front‑of‑house team, building accountability, engagement and strong service culture
Manage staffing levels, rosters, attendance, training, performance reviews and disciplinary matters in line with company policies
Maintain a strong presence on the floor, personally managing VIPs, regular guests, service recovery and guest feedback
Anticipate and manage guest expectations with confidence, professionalism and attention to detail
Ensure all team members understand and uphold restaurant SOPs, service sequence, grooming, hygiene, health and safety, and standards
Monitor sales, labour, beverage performance, stock control, wastage and operating costs; take prompt action to improve results
Work closely with the kitchen and bar teams to maintain quality, speed of service, menu knowledge and effective communication
Support menu and beverage initiatives through strong knowledge of international cuisine, cocktails, wine and food‑and‑beverage pairing
Prepare accurate operational reports, including sales performance, staffing, guest feedback, incidents, maintenance and action plans
Use restaurant technology confidently, including POS, reservation systems, reporting tools, inventory platforms and digital guest‑feedback channels
Ensure compliance with licensing, food safety, workplace safety and all relevant company and statutory requirements
Work closely with the Director of Operations on business performance, operational priorities, team development and continuous improvement
Be available to work weekends, public holidays and varied shifts as required by the business.
Minimum Two years’ experience as a Restaurant General Manager in a high‑volume Western restaurant
WSET Level 3 or above is required or strongly preferred
Strong knowledge of cocktails, wine, spirits and beverage service
Fine‑dining or semi‑fine‑dining experience is preferred
Hotel restaurant or hospitality experience is preferred
Proven experience managing high‑volume business and leading large, diverse service teams
Strong knowledge of international cuisine and confidence communicating menu, ingredient and beverage details to guests and staff
Highly detail‑oriented, standards‑driven and proactive in identifying and resolving operational issues
Demonstrated ability to manage guest expectations and resolve complaints with professionalism and sound judgement
Commercially aware, with an understanding of sales, labour productivity, cost control, stock management and restaurant profitability
Tech‑savvy and comfortable using POS, reservation, reporting and operational management systems
Strong leadership, communication, coaching and people‑management skills
Organised, resilient and able to remain calm and effective during busy service periods
Fluent English communication skills; Cantonese and/or Mandarin would be an advantage
Immediately available or able to start at short notice.
Candidates with less experience will be considered as Assistant Restaurant General Manager
