MADÉ French Madeleines, a premium boutique-atelier in Central, Hong Kong, is seeking a Pastry Chef to autonomously run daily baking in our glass-atelier, alongside two colleagues.
You will master the signature base batter and its variations, ensure absolute freshness, and manage premium raw materials and deliveries to keep production uninterrupted. Morning bakes, live counter replenishment, and strict cleanliness are essential. You will report to the Head of Production and start early.
MADÉ reinvents the classic French madeleine as a premium boutique-atelier — freshly opened on Lyndhurst Terrace, Central, and growing fast. Our batter is prepared the day before, rested overnight, then baked fresh throughout the day in our glass-walled kitchen behind the retail counter.
One of our three Pastry Chefs. You autonomously run the daily baking of our madeleines in the glass atelier, in rotation with two colleagues — each fully able to cover the others' batches during leave or absence. You report to the Head of Production (recipes and quality standards).
Bake our high-end madeleines (~1,500 pieces/day and growing); master the signature base batter and its variations.
Own daily quality control: guarantee uniform, visually flawless and delicious results on every batch; absolute freshness (no day-old product sold the next day).
Own stock management: monitor premium raw-material inventory, follow up orders and manage deliveries receiving so production never stops.
Manage the morning bake and live counter replenishment.
Keep a clinically clean, impeccably organised kitchen at all times (visible to the public through glass).
Operate professional combi-ovens with precision; strictly respect the brand's trade secrets.
Pastry diploma (CAP, BTM or equivalent) or equivalent proven experience in pastry.
Mastery of chemically-leavened and whipped batters; recognised for consistency and attention to detail.
Dynamic, strong team player; fully reliable on early-morning starts.
Right to work in Hong Kong (no visa sponsorship provided).
HKD 25,000/month + monthly performance bonus — up to HKD 28,000 total.

Full-time · 45 hours/week · rotating shifts including 4:00 AM starts at least twice a week (other shifts approx. 07.00am-4pm) · 5 days/week, 2 days off · 3-month probation · immediate start.
