Job summary

Global Sports Jobs Limited is seeking a senior kitchen professional to lead a busy club catering operation across multiple Clubhouses, including Happy Valley and Sha Tin Racecourses. The role focuses on mise en place, food preparation and presentation, kitchen hygiene and safety, with coaching responsibilities for cooks.

The post holder will ensure high standards, maintain professional service, and collaborate closely with kitchen colleagues during service while upholding health and safety

Qualifications

• Minimum 8 years of relevant kitchen experience in prestigious hotels or restaurants.
• At least 2 years in a similar position.
• Ability to communicate effectively in Chinese.
• Awareness of market trends and contemporary food presentation.

Responsibilities

• Be conversant with menu items and preparation methods for service.
• Check and control mise en place for the following day.
• Set up the section as required by the supervisor and ensure readiness before service.
• Maintain kitchen hygiene and cleanliness, including wash areas and stock rotation.
• Taste and inspect food for freshness and quality.
• Minimise food wastage and comply with safety rules and HACCP.
