Job summary

The Hong Kong Jockey Club, based in Sha Tin, invites applications for a Cook in our Western Production Kitchen. The role requires attention to detail, a commitment to food safety, and the ability to work within a busy club setting serving Members and guests.

You will manage mise en place, assist in food requisitions, train junior cooks, and uphold HACCP standards while delivering high-quality dishes across three Clubhouse outlets.

Qualifications

• Minimum 5 years experience in Asian restaurant settings.
• Able to work in a fast-paced environment.
• Experience in clubs or hotels preferred.

Responsibilities

• Be conversant with menu items, ingredients, methods of preparation, and presentation style.
• Maintain kitchen hygiene and cleanliness including pot and dish wash areas, ensuring tools are in good condition and correct storage and stock rotation.
• Check and control mise en place, ensuring that this is well organized for service the following day.
• Taste and examine food prepared for freshness and required quality.
• Set up the section as required by supervisor, ensuring it is checked before service.
• Be responsible for basic on-the-job training, coaching, and development of cooks.
