Job summary

Mandarin Oriental, Hong Kong invites applications for a Commis to join our Kitchen team in Hong Kong. The Commis will support the Chef de Partie with daily tasks to ensure smooth operation and high standards of quality and profitability. Reports to the Chef de Cuisine / Junior Sous Chef.

Key duties include mise-en-place, maintaining par stock, cleanliness, equipment checks, HACCP adherence, and assisting senior chefs in food preparation and production of all items.

Qualifications

• Minimum 3 years Italian fine dining experience in similar capacity.
• Self-motivated and responsible.
• Independent and able to work under pressure.
• Immediate available preferred.

Responsibilities

• Assist with mise-en-place in kitchen.
• Maintain proper par stock for mise-en-place.
• Keep kitchen areas clean and hygienic.
• Check refrigerators, utensils and kitchen equipment cleanliness.
• Adhere to food handling, production, preparation and presentation standards.
• Follow health and safety, sanitation and HACCP policies.
• Assist senior chefs in preparation and production of all food items.
