Job summary

Mandarin Oriental, Hong Kong is seeking an Assistant Restaurant Manager to join our Food & Beverage team at Man Wah Restaurant in Hong Kong.

You will assist the Manager in daily operations, supervise colleagues, contribute to business marketing, and help achieve financial targets while maintaining hotel standards. Fluent in Mandarin, Cantonese and English with at least 3 years in a luxury hotel, you thrive under pressure and build strong rapport with outlet heads.

Qualifications

• Minimum 3 years’ working experience in a similar capacity, preferably in luxury hotel.
• Experience in Chinese Cuisine is a plus.
• Excellent managerial and interpersonal skills.
• Passion in customer service and hospitality industry.
• Able to work under pressure.
• International exposure will be an advantage.
• Excellent communication skills in Mandarin, Cantonese and English.

About the job

Based at the Mandarin Oriental, Hong Kong within Man Wah Restaurant in Hong Kong, the Assistant Restaurant Manager is responsible for assisting the Manager on daily operation, monitoring and supervise the general colleagues, assist the Manager on business marketing planning, organize special events, achieve the financial target, take a role in the absence of Manager. The Assistant Restaurant Managerreports to theRestaurant Manager.

As Assistant Restaurant Manager, you will be responsible for the following duties:

• Advise the Manager on discussions with Chefs to produce menus and promotion programme
• Inspect the front and back areas and make sure all is always impeccable
• Keep strict control of all security matters, especially the keys of the storeroom, restaurant and colleague drawers
• Build up positive rapport with the heads of other outlets
• Control the quality of food and beverage served
• Handle complaints from guests and colleagues
• Responsible for the control of disciplinary procedures and ensure the hotel’s standards are achieved
• Organize and follow through the training and daily meetings with all staff
• Arrange the hygiene and fire precaution lectures
• Maintain a tight financial control in all areas relating to the budget
• Maintain par stock of all items as agreed and ensure breakage and wastage are kept to the absolute minimum
• Review short term variance of cover sales and labour costs by meal periods.

As Assistant Restaurant Manager, we expect from you:

• Minimum 3years’ working experience in similar capacity, preferably in luxury hotel
• Experience in Chinese Cuisine is a plus
