Smyth & Co are proud to be partnering exclusively with a highly respected client to appoint a Head Sushi Chef for one of London's most exciting new restaurant projects.

This is an exceptional opportunity to take full ownership of a premium sushi offering, leading a talented team and working with world-class ingredients. The restaurant is stylish, elegant, and known for its uncompromising standards - this role offers the chance to shape one of London’s standout sushi kitchens.

What We’re Looking For:

  • A genuine passion and deep, intuitive understanding of sushi, with an obsessive focus on detail, balance, and presentation
  • Experience in Michelin-starred or internationally acclaimed restaurants (UK, Japan, US, Europe)
  • A calm, assured presence in the kitchen, able to build, mentor, and inspire a high-performing team
  • Skilled in sourcing, selecting, and working with the finest ingredients and suppliers worldwide
  • A creative mind: able to design a sushi menu that respects tradition while introducing modern, progressive elements

The Role:

  • Lead and oversee the sushi kitchen, setting and maintaining the highest standards of execution and consistency
  • Create, refine, and evolve an innovative sushi menu in collaboration with the executive team
  • Train, mentor, and develop junior chefs to maintain technical excellence across the team
  • Maintain strict food safety, health, and hygiene standards at all times
  • Work closely with senior leadership to shape the culinary direction of the restaurant

  • Highly skilled in both traditional Sushi techniques and contemporary sushi innovation
  • Respected by peers for discipline, leadership, and ability to build a strong kitchen culture
  • Confident managing a busy, premium restaurant service at the highest level
