Job summary

COREcruitment Ltd is seeking a Sous Chef for an Open Fire restaurant in Central London. The role focuses on charcoal cooking and creative small plates with a South Asian influence, in a 70-cover site with up to 250 covers daily.

You will lead a brigade of 8-10, assist with training and menu development, manage costs, and uphold food safety standards while driving quality and consistency across all dishes.

Qualifications

• Experience cooking with charcoal and open fire.
• Creative approach to cooking and menu development.
• Strong team management skills.
• Experience recruiting and training BOH staff.
• Food safety and standards focused.

Responsibilities

• Hands-on cooking with the team across all sections.
• Support the Head Chef with training and menu development.
• Work closely with the owner and directors on new dishes.
• Maintain high standards of food quality, presentation and consistency.
• Support recruitment and training of BOH staff.
• Work to budgets, GP and P&L targets.
• Uphold food safety and hygiene standards.
