Job summary

COREcruitment Ltd is seeking a Sous Chef for an Open Fire Restaurant in Central London. The kitchen operates over charcoal with a creative small plates menu and South Asian influences. The role is hands-on in a 70-cover site, up to 250 covers a day, with a brigade of 8-10 chefs. You will work closely with Head Chef on training, menu development and new dishes.

This is a quality-focused, ambitious operation offering 28 days holiday, staff meals and group benefits. Initially 48-hour contract.

Qualifications

• Experience cooking with charcoal and open fire.
• Creative approach to cooking and menu development.
• Strong team management skills.
• Experience recruiting and training BOH staff.
• Food safety and standards focused.

Responsibilities

• Hands-on cooking with the team across all sections.
• Support the Head Chef with training and menu development.
• Work closely with the owner and directors on new dishes.
• Maintain high standards of food quality, presentation and consistency.
• Support recruitment and training of BOH staff.
• Work to budgets, GP and P&L targets.
• Uphold food safety and hygiene standards.
