The Bosville and Marmalade Hotels are seeking dedicated Sous Chefs to join their talented culinary teams on a full-time permanent basis. The position involves working a minimum of 45 hours per week, across a schedule of five days out of seven, including weekends.

The Dulse and Brose restaurant at the Bosville Hotels showcases the finest Skye produce, prepared elegantly in a contemporary setting. The menu features a diverse selection of local seafood, meats, and delicacies from the Skye larder.

The Chargrill restaurant at Marmalade Hotel specializes in steak and seafood, celebrating Scottish farmers and their quality produce. The menu highlights prime Scottish meats grilled to perfection, complemented by locally sourced side dishes prepared using modern Scottish techniques.

As a Sous Chef, you will be guest-focused and committed to delivering memorable culinary experiences. The ideal candidate will prioritize cleanliness and hygiene, ensuring all health and safety protocols are strictly followed. Pride in your work and a passion for guest service should be evident in every dish prepared.

Job Responsibilities

  • Prepare, cook, and plate dishes according to recipes and standards
  • Maintain food quality and consistency
  • Assist in menu planning and development
  • Keep the kitchen clean and organized
  • Motivate, supervise, and train junior staff members
  • Communicate effectively with front-of-house and kitchen staff
  • Lead the kitchen team in the Head Chef’s absence
  • Manage stock levels and place orders with suppliers efficiently
  • Receive full training tailored to each kitchen’s specific needs
  • Comply with all health and safety, HASAP, and COSHH regulations
