We burst onto the restaurant scene in 1997, when we shook up London and showed the UK a new way of eating. Part of this was the 'kaiten' conveyor belt and colour-coded dishes which made our name.
We're all about fresh, flavoursome, authentic Japanese food. Sushi is what we're famous for, but we also have a mouth-watering range of hot street food available - from traditional classics to innovative fusion dishes. All packed with rich, aromatic flavours and umami. Today, we have over 70 restaurants worldwide, more than 300 kiosks in the UK, grocery products, and pre-packaged sushi in major UK supermarkets.

What you will be doing:
The Sous Chef is responsible for delivering a great experience for both our team and guests. You are passionate about our food and will support the management team across the restaurant. Your goal is to ensure happy teams and guests, fostering this mindset across the staff.
You will run engaging shifts, interact with team and guests, and ensure only the best food is served. You will develop the team to Super Squad status and understand all aspects of the business. You should be comfortable in all kitchen sections, including fish cutting, rice cooking, sushi rolling, and daily kitchen prep. You will continually strive to improve our food quality while maintaining a safe kitchen and restaurant environment.
