Job summary

RED Hotels is seeking a Wine Specialist / Sommelier to join the Food & Beverage team across Scarlet Hotel and Bedruthan Hotel & Spa in Cornwall. You will craft bespoke wine pairings, guide guests through our curated list, and lead engaging tastings to elevate dining experiences.

The role supports growth with training, qualifications, and a commitment to sustainability. A passion for storytelling and guest service is essential in a family-owned Cornish business.

We’re looking for a Wine Specialist / Sommelier to join our Food & Beverage team across our two iconic Cornish hotels, helping to shape exceptional wine experiences for our guests. This is an exciting opportunity for someone who loves wine, storytelling and hospitality in equal measure.

Working across both Scarlet Hotel and Bedruthan Hotel and Spa, you’ll guide guests through our carefully curated wine lists, create thoughtful pairings, lead engaging tastings and deliver warm, personalised service that elevates every dining experience.

What do we want?

We’re looking for a knowledgeable and enthusiastic Wine Specialist / Sommelier who can combine a passion for wine with exceptional guest service. You’ll play a key role in delivering wine experiences that are both approachable and memorable, helping guests discover new wines and enhancing their dining journey through expert recommendations and pairings.

This role is ideal for someone who enjoys connecting with people, sharing knowledge, and creating meaningful guest experiences through wine.

Responsibilities and Duties:

• Create bespoke wine pairings and recommendations to complement seasonal menus
• Guide guests through our curated wine list, offering expert knowledge and tailored suggestions
• Lead wine tastings and small-group wine experiences for guests
• Deliver warm, attentive and personalised service throughout the guest journey
• Maintain wine stock, cellar organisation and ensure correct storage and rotation of wines
• Support the wider Food & Beverage team with wine knowledge and service training
• Assist in developing and evolving the wine offering in line with trends, sustainability and guest preferences
• Continue developing your own wine knowledge through training and qualifications

Qualifications:

• WSET Level 2 or above is desirable
• Previous experience in wine service, hospitality or a sommelier role is desirable
• A strong interest in wine and willingness to continue professional development is essential
• Personal Licence (desirable but not essential)

• Confidence in recommending wines and engaging with guests
