Virgin Hotels Edinburgh is seeking a passionate Sommelier to lead wine service across our F&B outlets, sharing knowledge and enthusiasm with guests.

Under the F&B Manager, you will supervise staff, maintain standards, and drive exceptional guest experiences and financial performance from opening to close.

A WSET qualification and 1–2 years of F&B/restaurant management experience are preferred; strong wine and sake interest welcomed.

Your Mission:

Under the general guidance of the F&B Manager and General Manager, this role leads the F&B outlets with energy, motivation, and commitment to deliver outstanding, experience-led service and excellent financial results. Responsible for supervising staff, ensuring adherence to standards, and optimizing operations. The role involves active engagement from opening to closing procedures, focusing on exceptional guest experiences and financial performance. All roles within the outlets report to this position.

Role Responsibilities:

What exactly you will be doing…

As Sommelier you will have a solid understanding of both new and old world wines and successfully completed WSET or equivalent qualification to a high level. You will have a natural flair for service and in delivering a strong service culture, with a natural ability to motivate and develop others. You will have a proven background within a similar position and environment where quality food, wine and ingredients are key priorities.

Background must-haves

• Current, legal and unrestricted ability to work in the UK.
• High school equivalent or education required.
• Minimum 1-2 years of previous F&B/Restaurant management experience.
• A strong passion for wine and beverage service, with an interest in sake and a desire to expand your knowledge
