The Ivy Restaurants Ltd in St Albans is seeking a Senior Sous Chef to support the Head Chef and uphold our high standards of dining. You will lead the kitchen from the main pass, guide staff through busy services, and ensure every dish meets our exacting quality.

You will manage wastage, scheduling, performance, stock control, and health and safety, with opportunities for career development and a discretionary bonus scheme.

Qualifications

• Previous experience as Senior Sous Chef or similar in a busy kitchen.
• Strong culinary skills and a passion for quality.
• Leadership and excellent communication.
• Understanding EBITDA, GP and PnL to support profitability.
• Thrives in fast-paced, high-pressure environment.
• Experience leading a large kitchen team.

Responsabilités

• Assist with wastage, GP & Labour controls.
• Assist in scheduling, staffing, and performance management of kitchen personnel.
• Ensure that every dish is prepared and executed to the highest standards.
• Ensure correct prep levels by our dedicated prep team.
• Ensure deliveries and stock are put away correctly by the Goods Receiver.
• Precise ordering to ensure full menu availability and minimum wastage.
• Lead the team through positive and constructive methods.
• Daily due diligence.
• Looking after staff wellbeing.
• Ensure compliance with health and safety regulations.
• Train and mentor kitchen staff to maintain high food standards.
• Pioneer a positive work environment and fostering teamwork.
