Job summary

MCG Recruitment in Exeter is seeking a Sous Chef to join a busy, high-energy kitchen and help lead the brigade alongside the Head Chef. You’ll play a key role in maintaining standards and driving work pace during service.

This exciting opportunity offers a package of up to £45,000 with tronc and bonus, plus quarterly bonus, staff meals, career progression and a supportive team culture in a growing hospitality business.

Qualifications

• Proven experience in a fast-paced, high-volume kitchen.
• Strong technical cooking skills with a passion for exceptional food.
• Experience leading and developing a kitchen team.
• Ability to take control of the kitchen when required.
• Good knowledge of food safety, hygiene and compliance.
• Experience with stock control, ordering and food cost management.
• Excellent organisation and communication skills.

Responsibilities

• Taking charge of the kitchen in the Head Chef's absence, ensuring smooth and efficient service.
• Leading from the front during busy services while maintaining high standards.
• Supporting recruitment, onboarding, training and development of the kitchen team.
• Coaching and motivating the brigade, creating a positive and high-performing kitchen culture.
• Ensuring every dish leaving the kitchen meets quality, consistency and presentation standards.
• Maintaining excellent food preparation, cooking and service standards.
• Assisting with menu development and ensuring recipes and specifications are followed.
• Managing service flow and keeping food wait times under control.
• Staying calm and solutions-focused during busy services and challenges.
• Supporting stock management, ordering, deliveries and inventory control.
• Monitoring food costs, waste and kitchen efficiency.
• Ensuring food safety, health & safety and compliance.
• Providing constructive feedback and developing team members.
• Keeping the kitchen clean, organised and prepared for every service.
