This role involves leading a team of 11, ensuring food hygiene compliance, and maximizing profits through effective cost control. Our client is a busy 4 star hotel, set inside a beautiful historic country house hotel, just 15 minutes’ drive from the centre of Blackburn. Situated close to the nearby motorway, with a bus stop outside the hotel and the nearest train station being less than 2 miles away; the hotel is easily accessible for both drivers and non-drivers alike.
The hotel offers diners an elegantly decorated main restaurant, serving international cuisine, catering for an average of 100 covers during the week, rising to 150 covers at weekends. There is also a lounge bar area which can seat an additional 40, and offers a selection of lighter meals and snacks. The leisure club also offers an array of light snacks, seating up to 50 guests. An afternoon tea offering is popular with leisure and spa guests, catering for an average of 10-20 covers per day.
Weddings, meetings and events are also popular here and the hotel can cater for up to 450 covers at any one time.

What’s involved?
As a Senior Sous Chef, you will work closely with the Head Chef, contributing to menu creation and assisting with the training and development of a kitchen team of 11. In addition to this, you will lead from the front, keeping the team motivated and running the kitchen in the absence of the Head Chef.
You should ensure that both yourself and the team are working to company brand standards and that compliance is met with regards to food hygiene, HACCP and health and safety standards at all times, managing food cost controls to maximise profits.
The successful candidate will have a positive, ‘can do’ attitude, be passionate about food and will be able to work under pressure.
