Job summary

Education Authority is seeking a Catering Manager to lead day-to-day kitchen operations across Dromore-area dining facilities. You will oversee menu planning, portion control, food safety, allergen management, and staff supervision to deliver quality meals for children, young people and staff.

You will manage deliveries, stock, equipment, and budgets, while promoting the catering service to boost uptake and organise events. A part-time post with a retainer during holidays is offered.

Qualifications

• NVQ level 2 in food preparation and cooking or City & Guilds 706-1 & 706-2 or equivalent or higher relevant qualification or two years’ demonstrable experience in food preparation and cooking within a catering establishment.
• Evidence of effective supervision or management of a catering team.
• Demonstrable experience in stock control, budget management and financial controls.
• Knowledge of Hazard Analysis Critical Control Point (HACCP).
• Knowledge of the provision of special diets, e.g. allergens and ethnic diets.

Responsibilities

• Execute skilled cooking activities and innovation connected to the full range of menu provisions, including preparation of menus, portion control, plating presentation, special dietary meals (IDDSI), theme days/events and function catering where appropriate.
• Organise and supervise all aspects of food service, including service points and the transportation of meals, if required.
• Manage dining centre kitchens as well as the production kitchen and ensure safety and compliance with food safety legislation.
• Maintain allergen matrices and ensure temperatures are recorded with complete records.
• Handle deliveries, ordering, storage, stock-take, waste minimisation, and reporting of food safety issues.
• Promote the catering service to parents, principals, pupils and customers to increase uptake of meals including events.
• Establish communication links with the school on service delivery and address customer feedback with the Regional Operations Manager.
• Carry out risk assessments, including Fire Risk Assessment, and ensure staff training and discipline procedures are followed.
