Job summary

Dakota Hotels in Scotland is seeking a Restaurant Manager to lead the dining team and uphold the Dakota Experience.

You will oversee service across breakfast, lunch and dinner, train staff, and work with the Head Chef on menu and wine list. Strong leadership and communication are essential to success in this fast-paced setting.

Qualifications

• At least one year's experience as an Assistant Restaurant Manager or above in a similar full-service restaurant.
• A minimum of four years experience working in restaurants.
• Experience in writing wine lists, development of team members, and F&B revenue maximisation.
• Comprehensive knowledge of wines and high-end service standards. Certification in WSET level 2 or above is beneficial.
• A confident leader with a hands-on approach to leading a team.
• Be an outgoing personality with effective communication skills.
• Ability to work at pace and be proactive for the duration of your shift.
• An enthusiastic individual who will promote our culture of positivity.
• Be task oriented with a great pride for the work they do and attention to detail.
• Flexible with shift patterns and available around the needs of our business.

Responsibilities

• Run services within the restaurant through breakfast, lunch or dinner, offering the highest levels of service to all guests. Hands-on service and hosting; drive standards.
• Drive the commercial running of the restaurant including writing the wine list and payroll management; rota, bookings diary, sequence of service; drive sales culture.
• Communicate with Bar, Kitchen and Reception to ensure a smooth service and enhance the Dakota Experience for guests.
• Collaborate with HR on interviewing, training, appraisals and ongoing people development; deliver on-the-job training for polished guest service.
