Hand Picked Hotels is seeking a Restaurant and Bar Manager for Rhinefield House Hotel in Brockenhurst, Hampshire. The role leads the bar, lounge, terrace and conservatory dining, with a small room service operation, ensuring consistently excellent guest experiences.

The successful candidate will manage a high-volume operation, drive service excellence, and work five days out of seven (40 hours) with weekend rotas.

Responsibilities

What will the role involve?

This role will be responsible for managing the Bar, Lounge, Terrace, conservatory restaurant and a small room service operation, ensuring that the Team consistently delivers exceptional service, putting the guest at the heart of all activities.

You will be leading the team in the effective delivery of department goals, planning and organising work activities, seeking to continuously improve ways of working and engaging the team to do the same.

Maintaining a safe, healthy and secure workplace environment, following all work protocols and engaging the team with training and upsell initiatives.

Building effective relationships to create a positive learning environment will be a key requirement to ensure the success of the department and team.

Making clear, confident decisions, will be second nature to you, consulting with others where needed ensuring you all reach the same goals. Able to work closely with the Conservatory Head Chef to develop and elevate the Conservatory offering, service and overall guest experience.

Commercially aware, with a good understanding of labour, stock, revenue and cost control.

This is a full-time role working 5 days out of 7 including weekends on a rota basis, 40 hours per week, which may vary depending on business.

• You will have strong Premium bar experience, ideally within a busy country house or luxury hotel environment, and be comfortable managing a high-volume bar operation, with good knowledge of drinks, cocktails, stock control and commercial performance.
• Previous restaurant management experience is essential.
• You will be a strong people manager who can lead from the floor, develop the team and maintain standards during busy services.
• Being confident managing multiple outlets and moving between bar and restaurant operations depending on business needs, is key to being successful in this role.
