Job summary

Bell Recruitment is seeking an experienced Artisan Baker (Trained) for a night production role in Bleary, Craigavon. You will lead the full bake process from weighing to baking, ensuring quality and timely dispatch for each order.

The role requires hands-on craft bakery experience, strong dough understanding, and the ability to work a 9pm start six nights a week with fixed dispatch deadlines. Night-shift fitness and Level 2 hygiene certification are preferred.

Qualifications

• Proven hands-on experience in a craft or scratch bakery.
• Genuine understanding of dough development and proof readiness.
• Confident hand shaping at pace to a consistent standard.
• Willingness to start at 9pm six nights a week with fixed dispatch deadlines.
• Food hygiene certificate (Level 2) or willingness to obtain.
• Physically able to handle sacks of flour and lifting.

Responsibilities

• Accurately weigh ingredients to recipe every time.
• Mix doughs with correct development and night conditions.
• Manage bulk fermentation and folding to build strength and flavour.
• Divide, pre-shape and final-shape dough by hand to consistent weights.
• Judge proof by feel and sight, not just the clock.
• Load, steam, bake and unload the oven with consistent colour.
• Look after starters and pre-ferments, feeding and refreshing.
• Adhere to nightly production plan for timely dispatch.
• Keep records: batch weights, temps, bake times, wastage.
• Maintain food safety, allergen controls and cleaning as you go.
• Support and train less experienced team members.
