Job summary

Green & Fortune Ltd. is seeking a Bars Operations Manager to lead bar operations across multiple London venues, driving service standards and financial discipline. You will shape menus, oversee staffing, and partner with senior leadership to elevate guest experiences.

You’ll manage POS, stock, payroll and rostering systems, and ensure licensing compliance while mentoring Bar Managers to deliver exceptional events and top-tier performance.

Qualifications

Experience managing bar operations across multiple venues.
Proficient with POS, stock, payroll and rostering systems; Excel and P&L knowledge.
Strong leadership, training, recruitment and licensing compliance.

Responsibilities

Oversee day-to-day bar operations across multiple venues with consistent service standards.
Support Bar Managers through site visits, audits and hands-on guidance.
Develop drinks menus, costed to commercial targets and aligned with trends.
Recruit, onboard and develop bar teams; coach managers and supervisors.
Manage margins, stock, waste, purchasing, budgeting and reporting.
