Job summary

Maki & Ramen in Sheffield is hiring an experienced Sushi Chef to lead the launch and shape the future of our new site. You will prepare and present high-quality sushi and sashimi, perform advanced knife work, and ensure fresh fish handling in line with HACCP standards.

We offer a competitive salary (£13–£13.50 per hour, typical earnings up to £16 p/h), 45–50 hours per week, negotiable shifts, company pension, staff meals, and employee discounts.

Qualifications

• Proven experience as a skilled Sushi Chef in a high-quality restaurant.
• Excellent knife skills, including filleting, portioning and sashimi cutting.
• Strong knowledge of Japanese ingredients, sushi rice preparation and traditional techniques.
• In-depth understanding of raw fish handling, HACCP compliance and food safety.

Responsibilities

• Prepare and present high-quality sushi and sashimi to an exceptional standard.
• Carry out advanced knife work and rice preparation.
• Ensure correct handling and storage of raw fish per regulations.
• Maintain cleanliness and mise en place in the sushi section.
• Support the Head Sushi Chef with service leadership and mentoring.
