Job summary

Solina Cardiff is seeking a talented Sous Chef to help lead a busy kitchen, ensuring high standards from preparation through to plating. You will work closely with the Head Chef, supervise services, manage stock and rotas, and uphold food safety at all times.

You will also mentor cooks and apprentices, sharing expertise to develop the team and maintain the Solina standard during busy service periods.

Qualifications

• Experience as a Sous Chef in a busy kitchen
• Strong knowledge of food safety, HACCP and allergens
• Proven ability to lead shifts and manage kitchen operations
• Experience in stock management, ordering and cost control
• Ability to train and develop junior chefs and apprentices
• Clear communication and organisational skills

Responsibilities

• Lead and support the Head Chef in day-to-day kitchen operations
• Take responsibility for the kitchen in the Head Chef's absence
• Plan and lead organised, efficient services
• Ensure consistency in flavour, presentation and portion size
• Oversee mise en place and daily preparation across sections
• Manage stock, deliveries, and weekly/monthly stocktakes
• Support rotas, recruitment and team development
• Monitor food costs, waste and portion control
• Contribute to menu development and costing ideas
• Maintain strong communication between kitchen and front-of-house
