Job summary

Celebrity Cruises is seeking an experienced Bakery Manager to oversee daily bakery operations aboard ship. You will manage production, quality, and display of bread, while coaching the team and ensuring USPH compliance across all shifts.

Ideal candidates have CDP Baker experience on cruise ships, strong management and customer service skills, and the ability to work in a multicultural environment. This role requires leadership and attention to inventory and cost controls.

Qualifications

• Minimum of two years' experience as a CDP Baker in upscale hotel, resort, cruise ship or convention banqueting service.
• A culinary school degree is required.
• Strong management skills in a multicultural and dynamic environment.
• Strong communication, problem solving, decision making, and interpersonal skills.
• Superior customer service, teambuilding, and conflict resolution skills.
• Knowledge of guest service principles, needs assessment techniques, quality service standards and guest satisfaction evaluation techniques.
• Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.
• Intermediate computer software skills.
• Understanding of basic accounting principles such as Debits/Credits and adjusting entries.
• Ability to write reports and business correspondence and to establish rapport with ship’s Senior Officers and corporate office.

Responsibilities

• Ensure smooth operation of Bakery Shop and production daily.
• Direct, coach, supervise and evaluate all direct reports.
• Responsible for production, quality, and presentation of bread for daily menus.
• Prepare production forecasts and record leftovers to control costs.
• Supervise the set-up of the bread display in buffets.
• Comply with USPH rules and regulations daily.
• Ensure bakery cleaning per Executive Chef’s schedule and minimize equipment damages.
• Prepare pantry for USPH inspections.
• Responsible for requisition and transport of items from main stores to bakery.
• Ensure recipes/master list and yields meet company standards.
• Complete daily consumption recap as required by Executive Chef.
• Ensure bakery personnel are on time and in proper uniforms.
• Understand Time and Attendance procedures and work schedules.
• Assist guests and crew with inquiries as needed.
• Attend meetings, trainings, and other work-related activities.
• Coach and train assigned team members.
• Perform related duties as required.
