Job summary

Maison Estelle in Mayfair is seeking an inspiring Junior Sous Chef to join our pastry team. You will support the Sous Chef and Head Chef in day-to-day pastry kitchen operations, ensuring all dishes meet our exacting standards.

You will lead the kitchen brigade, train staff on food handling, health and safety, and work with suppliers on stock and menu ideas to deliver exceptional plating and presentation across luxury outlets.

• Proven experience as a Pastry Junior Sous Chef in a luxury or lifestyle multi-outlet operation.
• Inspiring leader able to run culinary teams and departments.
• Experience with purchasing, health and safety and payroll and rota systems.
• Keeps up-to-date with current pastry trends and best practices.

Responsibilities

• Supporting the Sous Chef and Head Chef in day-to-day operational management of the pastry kitchen.
• Communicating procedures and presentation standards, ensuring portion sizes and high quality.
• Training kitchen staff on proper food handling, maintenance and safety.
• Managing the kitchen brigade and leading a team of chefs in cooking and preparing meals.
• Ensuring presentation and cleanliness standards across kitchen and back of house areas.
• Managing inventory and stock recording; assisting with supplier relations.
• Assisting with creation, development and testing of innovative menu ideas.
• Ensuring all dishes are prepared to the highest standard with care in presentation.

Who are we?

Maison Estelle is a private members’ club set in a Grade I-listed Georgian townhouse on Grafton Street, Mayfair. A ‘hosted home’, bringing people together that have plenty to say and nothing to prove. A new school club (no rules), with old school values of personalised service and discretion.

We are looking for an inspiring Junior Sous Chef to join our culinary team based in our wonderful Pastry team.

The on target earning potential for this role is £52,826 per annum comprising a base salary of £37,950 per annum plus a qualified estimate of £14,976 in gratuities and service charge*

Here's a bit more detail on what we see you doing in this role:

• Supporting the Sous Chef and Head Chef in day-to-day operational management of the pastry kitchen.
• Communicating to the Executive Chef, preparation procedures and presentation standards, observing methods of preparation, tasting and smelling prepared dishes, viewing colour, texture and garnishes, verifying portion sizes and ensuring that corporate standards for food quality are consistently met.
• Training the kitchen staff of proper food handling, maintenance and safety.
• Managing the kitchen brigade and lead a team of chefs in cooking and preparing meals, including checking for quality, and overseeing cooking techniques.
• Ensuring the highest possible standard of presentation & cleanliness in all areas of the kitchen, both in the kitchen itself and & back of house areas.
• Ensuring stock is correctly managed and a proper inventory recorded.
• Assisting in recruiting, training, assigning duties and supervising staff.
• Building and maintaining good relationships with suppliers regarding ordering and receiving stock.
• Assisting with the creation and development and testing of innovative menu ideas.
• Ensuring all dishes are prepared to the highest standard with the utmost care in presentation.
