Junior Sous Chef - London

ABOUT THE ROLE

As a Junior Sous Chef at our beautiful Cafe, Daylesford Pimlico, you will execute all dishes as per menu specifications. Ideally, you'll have experience in similar fresh food and restaurant environments or simply possess a passion for good food, making the basics come easily to you.

The role requires stamina and an enjoyment of the fast pace in our kitchens. Your natural confidence will enable you to give calm and clear instructions during busy periods. You'll be very organized and able to seamlessly coordinate your station.

SALARY: 31815 + Tronc
HOURS: Full time 48H

RESPONSIBILITIES

  • Reports to: Head Chef
  • To execute all dishes as per menu specifications
  • Support the Sous Chef in delivering creative, seasonal, on-brand specials, highlighting produce from the farm

SERVICE

  • To treat the produce with respect

OPERATIONS

  • Ensure kitchen audit requirements are adhered to
  • Support the Sous Chef and Head Chef in maintaining a safe workplace
  • Follow and adhere to cleaning rota at all times
  • Ensure kitchen equipment is well maintained, fully operational, and maintenance issues are reported and resolved

NUMBERS

  • Maintain awareness of stock levels and report low stock to the Head Chef/Sous Chef
  • Assist in managing kitchen stock and ordering to ensure full availability, minimal waste, and delivery of budgeted G.P.
  • Understand the importance of delivery of payroll percentage

PEOPLE

  • Assist in coaching junior chefs through training and development
  • Act as a role model in work ethic, service quality, and professional skills

  • Support in achieving a 5-star scores on the doors - Local EHO
  • Contribute to delivering 72%
  • Mentor junior chefs and complete module sign-offs
  • Complete and stay up-to-date with 100% mandatory training
