Mortimer House Kitchen in London is seeking a Junior Sous Chef to support the Head Chef, run the pass, and uphold our high standards. You will lead the brigade when the Head Chef is away, bring excellent cooking skills, and help with fresh menu launches and day-to-day kitchen operations.

Qualifications

• Experience as a Junior Sous Chef or strong Senior Chef de Partie.
• Excellent technical cooking skills.
• Calm leadership and clear communication when it's busy.

Responsibilities

• Run the pass and keep the brigade organized.
• Lead the kitchen when the Head Chef is away.
• Support the launch of new menus and specials.
• Help with ordering, stock rotation, GP and waste.
• Train and coach other, more junior chefs.
• Keep standards high on food safety, allergens and cleanliness.
