Job summary

Mortimer House Kitchen, Brava Hospitality Group's central London Italian restaurant, is seeking a Junior Sous Chef to help run a busy, open kitchen and uphold high standards across breakfast, lunch and dinner services.

You will support the Head Chef, lead the pass when needed, and coach junior team members while contributing to menu launches and cost control. The role offers strong progression in a vibrant, hospitality-driven group.

Qualifications

• Experience as a Junior Sous Chef or strong Senior Chef de Partie.
• Excellent technical cooking skills.
• Calm leadership and clear communication when it's busy.
• Understanding of GP, stock and kitchen costs.

Responsibilities

• Run the pass and keep the brigade organised.
• Lead the kitchen when the Head Chef is away.
• Support the launch of new menus and specials.
• Help with ordering, stock rotation, GP and waste.
• Train and coach other, more junior chefs.
• Keep standards high on food safety, allergens and cleanliness.
